Yes you can label your own dataset and fine-tune layoutLM v2. I am not familiar of Label Studio's output but you can certainly use UBIAI (https://ubiai.tools) to prepare your dataset. If you are interested by a trial, shoot me an email at admin@ubiai.tools and we will get you started.
